Founded by Champ Thanapong—whose years living, studying, and working in Mexico ignited a deep passion for authentic Mexican cuisine—Monte Cielo brings the bold, soulful flavors of Mexico to Kanchanaburi.
Guided by his training as a plant-based chef at Le Cordon Bleu, Champ and his team craft dishes that unite Latin flavors with local Thai ingredients, many of which come directly from our own farm on the resort grounds.

Monte Cielo is a family story, too. Champ’s father, Somsak, inspired our lush gardens with his love for the land, while his mother, Kaewta, passed down a deep respect for fresh, local ingredients and soulful, home-style cooking.
